Ako by povedali Am\u00edci, pun intended. Chcel som trocha zmenu od <a href=\"https:\/\/www.lukulia.sk\/magazin\/kuracie-srdiecka-na-paprike-a-vine\/\">s\u0155dc na paprike<\/a>, tak som sa rozhodol, \u017ee si ich sprav\u00edm na smotane. Do v\u00e4\u010d\u0161iny tak\u00fdchto receptov id\u00fa \u0161ampi\u0148\u00f3ny, ktor\u00fdm sa ja rad\u0161ej vyhnem. Tak som sa in\u0161piroval klasickou smotanovou om\u00e1\u010dkou k svie\u010dkovej a spravi\u0165 si ich s kore\u0148ovou zeleninou. A mus\u00edm poveda\u0165, \u017ee je to vynikaj\u00faca kombin\u00e1cia. Nakr\u00e1ja\u0165 zeleninu je s\u00edce trocha pracn\u00e9. Tak\u017ee to nie je a\u017e tak\u00e9 r\u00fdchle jedlo, ako srdcia na paprike. Ale v\u00fdsledok rozhodne stoj\u00ed za to. Skaramelizovan\u00e1 zelenina\u00a0dod\u00e1 v\u00fdborn\u00fa sladkos\u0165 a v spojen\u00ed s bohatos\u0165ou\u00a0(rozumej tukmi) smotany je to vynikaj\u00face. Chceme, aby bola zelenina a potom aj srdcia v tenkej vrstve po celej ploche. Jednak sa n\u00e1m zelenina a srdcia sk\u00f4r orestuj\u00fa a z\u00e1rove\u0148 chceme, aby sa n\u00e1m restovali, nie dusili.<\/li>\n<li>Zeleninu nakr\u00e1jame na mal\u00e9 kocky, asi tak 3 milimetre. Ke\u010f\u017ee om\u00e1\u010dku nebudeme mixova\u0165, nechceme tam ma\u0165 ve\u013ek\u00e9 kusy. Z\u00e1rove\u0148 to \u0161etr\u00ed \u010das restovania. K\u013eudne aj o tak\u00fdch 10 a\u017e 20 min\u00fat. Treba na nich ale da\u0165 pozor, preto\u017ee mal\u00e9 k\u00fasky sa r\u00fdchlej\u0161ie sp\u00e1lia.<\/li>\n<li>Z\u00e1rove\u0148 chceme ma\u0165 kocky zeleniny pomerne rovnomern\u00e9. Teda \u017eiadne bezhlav\u00e9 sekanie. Mal\u00e9 k\u00faso\u010dky, ktor\u00e9 pri tom vznikaj\u00fa, sa r\u00fdchlo sp\u00e1lia. Trocha \u00fasilia naviac, v podobe poctiv\u00e9ho kr\u00e1jania, sa \u010dloveku vr\u00e1ti v podobe lep\u0161ieho jedla. A v kr\u00e1jan\u00ed mrkvy je nie\u010do meditat\u00edvne.<\/li>\n<li>V tomto recepte restujem zeleninu a srdcia na jeden \u0161up. Teda najprv orestujem zeleninu a potom, e\u0161te ke\u010f nie je celkom hotov\u00e1, prid\u00e1m srdcia. Ma to t\u00fa v\u00fdhodu, \u017ee je to r\u00fdchlej\u0161ie a \u0161etr\u00ed sa riad (teda d\u00f4vodom je lenivos\u0165). Nev\u00fdhodou je, \u017ee je potrebn\u00e9 odhadn\u00fa\u0165 ten spr\u00e1vny okamih, kedy srdcia prida\u0165; \u010do chce cvik. In\u00e1\u010d bu\u010f prip\u00e1lime zeleninu alebo srdcia nebud\u00fa ma\u0165 t\u00fa farbu, ktor\u00fa by mohli ma\u0165. Alternat\u00edvou je bu\u010f srdcia orestova\u0165 ako prv\u00e9, vybra\u0165 ich, orestova\u0165 zeleninu a srdcia vr\u00e1ti\u0165, alebo restova\u0165 srdcia na druhej panvici a nesk\u00f4r ich prida\u0165 k zelenine.<\/li>\n<li>V\u0161etky pr\u00edsady, ktor\u00e9 sa prid\u00e1vaj\u00fa do u\u017e teplej panvice (zelenina, srdcia, v\u00edno\/v\u00fdvar, smotana) by mali ma\u0165 izbov\u00fa teplotu.<\/li>\n<li>Pri tomto recepte bud\u00fa ma\u0165 srdcia dostatok \u010dasu na uvarenie. Ale kto chce ma\u0165 istotu, m\u00f4\u017ee pred koncom varenia to najv\u00e4\u010d\u0161ie rozkroji\u0165 a presved\u010di\u0165 sa, \u010di je tepelne upraven\u00e9 pod\u013ea jeho predst\u00e1v.<\/li>\n<li>Tak ako ku svie\u010dkovej, m\u00f4\u017eete aj ku kurac\u00edm srdciam na smotane pod\u00e1va\u0165 brusnicov\u00fd komp\u00f3t\/d\u017eem. Mne to ale vyhovuje tak, ako to je.<\/li>\n<\/ul>\n<h3>Recept<\/h3>\n<ul>\n<li>350g kurac\u00edch s\u0155dc<\/li>\n<li>asi 200g kore\u0148ovej zeleniny (mrkva, zeler, petr\u017elen; mrkvy viac ako ostatn\u00fdch; m\u00f4\u017eete pou\u017ei\u0165 bal\u00ed\u010dek, ktor\u00fd sa pred\u00e1va do polievok)<\/li>\n<li>1 stredn\u00e1 cibu\u013ea<\/li>\n<li>50g masla (3-4 ly\u017eice)<\/li>\n<li>2 ly\u017eice oleja (olivov\u00fd alebo in\u00fd)<\/li>\n<li>1,5dl bieleho v\u00edna, v\u00fdvaru alebo vody na podliatie<\/li>\n<li>250ml \u0161\u013eaha\u010dkovej smotany alebo smotany na varenie<\/li>\n<li>vrchovat\u00e1 ly\u017ei\u010dka major\u00e1nu<\/li>\n<li>citr\u00f3nov\u00e1 \u0161\u0165ava<\/li>\n<li>so\u013e, \u010dierne korenie<\/li>\n<\/ul>\n<p>Kore\u0148ov\u00fa zeleninu nakr\u00e1jame na asi trojmilimetrov\u00e9 kocky, cibu\u013eu na o nie\u010do v\u00e4\u010d\u0161ie. Kuracie srdcia opl\u00e1chneme a osu\u0161\u00edme. Kto ich chce zbavi\u0165 pr\u00edpadn\u00fdch koncov ciev a krvi, m\u00f4\u017ee to spravi\u0165. Ale nie je to nutn\u00e9.<\/p>\n<p>Na v\u00e4\u010d\u0161ej panvici alebo hrnci na silnej\u0161om plameni rozpust\u00edme maslo s trochou oleja a po\u010dk\u00e1me chv\u00ed\u013eu k\u00fdm sa zohreje. Olej trocha uchr\u00e1ni maslo pred sp\u00e1len\u00edm. Prid\u00e1me kore\u0148ov\u00fa zeleninu a cibu\u013eu. Osol\u00edme \u0161tipkou soli a za pravideln\u00e9ho mie\u0161ania restujeme. Pod\u013ea potreby stlm\u00edme plame\u0148.<\/p>\n<p>Ke\u010f zelenina za\u010d\u00edna chyta\u0165 farbu, prid\u00e1me plame\u0148 na maximum a chv\u00ed\u013eo\u010dku nech\u00e1me panvicu, aby sa zohriala. Prid\u00e1me srdcia. Dostato\u010dne osol\u00edme a za pravideln\u00e9ho mie\u0161ania sprudka restujeme. Pod\u013ea potreby m\u00f4\u017eeme plame\u0148 stlmi\u0165.<\/p>\n<p>Ke\u010f je zelenina zlat\u00e1, takmer hned\u00e1, alebo srdcia pekne hned\u00e9 (v ide\u00e1lnom pr\u00edpade oboje s\u00fa\u010dasne :)) podlejeme ich v\u00ednom (popr\u00edpade v\u00fdvarom alebo vodou). To vyvar\u00edme na polovicu. Prid\u00e1me smotanu. Prid\u00e1vame ju po \u010dastiach, asi na \u0161tyrikr\u00e1t. Prid\u00e1me \u010das\u0165, zamie\u0161ame a po\u010dk\u00e1me, k\u00fdm za\u010dne bubla\u0165. Prid\u00e1me major\u00e1n, \u010dierne korenie a trocha soli. Pomaly var\u00edme, k\u00fdm om\u00e1\u010dka nezhustne. Na z\u00e1ver om\u00e1\u010dku ochutn\u00e1me a pod\u013ea potreby dochut\u00edme so\u013eou, \u010diernym koren\u00edm a citr\u00f3novou \u0161\u0165avou.<\/p>\n<p>Pod\u00e1vame ako r\u00fdchlu ve\u010deru alebo obed s chlebom, kned\u013eou alebo cestovinami.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Kuracie srdcia s\u00fa moja srdcov\u00e1 z\u00e1le\u017eitos\u0165.
