Zah\u0155\u0148a tak\u00e9 veci ako typ a zlo\u017eenie p\u00f4dy, \u010dlenitos\u0165 ter\u00e9nu, kl\u00edmu, mikrokl\u00edmu a slne\u010dn\u00fd svit. Niektor\u00ed zah\u0155\u0148aj\u00fa do terroiru aj elementy vnesen\u00e9 \u010dlovekom, napr\u00edklad druh pou\u017eit\u00fdch kvasiniek alebo dozrievanie v sudoch. Vo v\u0161eobecnosti sa ale tento pojem pou\u017e\u00edva sk\u00f4r na ozna\u010denie mno\u017einy vec\u00ed, ktor\u00e9 vpl\u00fdvali na dozrievanie hrozna, nie na v\u00edno samotn\u00e9. Niektor\u00e9 odrody hrozna d\u00e1vaj\u00fa v\u00edna relat\u00edvne nez\u00e1visl\u00e9 od terroiru. Pri v\u00ednach z in\u00fdch odr\u00f4d, napr\u00edklad <a href=\"https:\/\/www.etrend.sk\/trend-archiv\/rok-2014\/cislo-28\/desat-dovodov-preco-milovat-rizling.html\">R\u00edzlingu r\u00fdnskeho<\/a>, sa terroir podpisuje zna\u010dnou mierou na v\u00fdslednom charaktere. Aj ke\u010f bol spomenut\u00fd chme\u013e, a budeme sa mu venova\u0165 aj trocha ni\u017e\u0161ie, ako je to s pivom ako celkom? To, s\u00edce vyr\u00e1ban\u00e9 z pr\u00edrodn\u00fdch surov\u00edn, je &#8220;umel\u00fd&#8221; produkt, tak ako napr\u00edklad chlieb. V akej miere sa na \u0148om odr\u00e1\u017ea vplyv prostredia? Jednotliv\u00e9 pivn\u00e9 \u0161t\u00fdly sa mohli navz\u00e1jom dos\u0165 l\u00ed\u0161i\u0165 a \u010dasto chutili len miestnym obyvate\u013eom &#8211; a ob\u010das ani im. D\u00f4vodom tejto rozmanitosti boli jednak r\u00f4znorod\u00e9 recept\u00fary, napr\u00edklad prid\u00e1vanie r\u00f4znych <a href=\"https:\/\/en.wikipedia.org\/wiki\/Gruit\">byliniek<\/a> a \u010fal\u0161\u00edch pr\u00edsad; odli\u0161nos\u0165 miestnych surov\u00edn, hlavne vody a odr\u00f4d chme\u013ea, ale aj odli\u0161ne postupy pri pr\u00edprave sladu (\u010dasto p\u0161eni\u010dn\u00e9ho). V neposlednom rade za odli\u0161nos\u0165 mohli aj miestne kvasinky. Na rozdiel od s\u00fa\u010dastnosti, sa kvasinky nekultivovali (\u013eudia ani nevedeli, \u017ee nie\u010do tak\u00e9 existuje) a <\/span><span class=\"zw-portion\" data-format=\"{&quot;fgc&quot;:&quot;rgb(0, 0, 0)&quot;,&quot;fv&quot;:&quot;normal&quot;,&quot;fw&quot;:&quot;normal&quot;,&quot;ff&quot;:&quot;arial,helvetica,sans-serif&quot;,&quot;fs&quot;:&quot;normal&quot;,&quot;type&quot;:&quot;text&quot;,&quot;size&quot;:11,&quot;cs&quot;:&quot;normal&quot;}\">pri varen\u00ed piva sa<\/span><span class=\"zw-portion\" data-format=\"{&quot;type&quot;:&quot;text&quot;}\"> tak nedbalo na \u010distotu. Pivo malo z tohoto d\u00f4vodu \u010dasto nakysl\u00fa chu\u0165. To dozrieva v \u0161peci\u00e1lnych f\u013ea\u0161iach s dlh\u00fdm hrdlom a prid\u00e1va sa do\u0148 \u0161tipka soli. \u010eal\u0161\u00edm pr\u00edkladom nezvykl\u00fdch recept\u00far je <a href=\"https:\/\/en.wikipedia.org\/wiki\/Sahti\">sahti<\/a>. Je to tradi\u010dn\u00fd f\u00ednsky pivn\u00fd \u0161t\u00fdl, ktor\u00fd sa var\u00ed \u010dasto a\u017e zo \u0161tyroch druhov obiln\u00edn (sladovan\u00e9ho aj nesladovan\u00e9ho <\/span><span class=\"zw-portion\" data-format=\"{&quot;type&quot;:&quot;text&quot;}\">ja\u010dme\u0148a, ra\u017ee, p\u0161enice a ovsa) a dochucuje sa borievkov\u00fdmi bobu\u013eami (spolu s alebo namiesto chme\u013ea) a po uvaren\u00ed sa ced\u00ed cez borievkov\u00e9 kon\u00e1re. V r\u00f4znych regi\u00f3noch F\u00ednska sa m\u00f4\u017ee toto pivo l\u00ed\u0161i\u0165 a aj v okolit\u00fdch pobaltsk\u00fdch krajin\u00e1ch sa varia podobn\u00e9 pivn\u00e9 \u0161t\u00fdly. Vody obsahuj\u00face uhli\u010ditan v\u00e1penat\u00fd s\u00fa zase vhodn\u00e9 na varenie tmav\u00fdch p\u00edv ako s\u00fa portery, poch\u00e1dzaj\u00face z Lond\u00fdna, alebo stouty. Najzn\u00e1mej\u0161\u00ed je Guiness, ktor\u00fd vynikol v Dubline. Niektor\u00ed dokonca tvrdia, \u017ee Guinness, ktor\u00fd sa dnes var\u00ed v oboch mest\u00e1ch, chut\u00ed rozdielne ak je uvaren\u00fd v Lond\u00fdne alebo Dubline. A jednotliv\u00e9 odrody hrozna s\u00fa n\u00e1chyln\u00e9 na vplyv terroiru pod\u013ea toho, ko\u013eko miner\u00e1lov prep\u00fa\u0161\u0165aj\u00fa z vody, ktor\u00fa \u010derpaj\u00fa kore\u0148mi, do bob\u00fa\u013e. Z poh\u013eadu pivovarn\u00edctva je tu ale jeden rozdiel. V s\u00fa\u010dasnej dobe m\u00e1 \u010dlovek plne pod kontrolou, ak\u00e1 voda vstupuje do varn\u00e9ho procesu. \u010ci u\u017e je to jej filtr\u00e1ciu alebo prid\u00e1van\u00edm miner\u00e1lov.
